Halal sheep and goat slaughter line: full route and certification review

Follow the full halal sheep and goat route from receiving to chilling, with certifier-defined method, segregation, veterinary controls and equipment interfaces.

Halal route: from animal receipt to chilled product

Start with the recognized certification body and destination market. Write down the approved sheep/goat scope, the slaughter method, operator requirements and the evidence that the facility must retain. Translate that decision into the handling, work positions and equipment arrangement.

01 / Receiving and ante-mortem review

Record sheep or goat origin, animal identity and the receiving/lairage arrangement. The local veterinary team defines ante-mortem review and any held-animal route. The halal operating scope also needs the approved species and supply-chain requirements agreed with the certifier.

02 / Method approval and restraint

Have the recognized certification body confirm the slaughter method and operator requirements for the destination market. If reversible stunning is proposed, obtain species- and method-specific acceptance and the required evidence; do not assume that every authority permits it. Relate the agreed animal handling and restraint to safe operator access.

03 / Halal slaughter station and hoisting handoff

Locate the agreed slaughter work position, sanitation points and lifting handoff as one controlled entry into the bleeding section. The operating team and certifier must define the applicable personnel, method and records. The equipment photograph only shows rail and work-position interfaces.

04 / Bleeding and release to dressing

Protect the required bleeding sequence and the verification before dressing. Have the certifier and veterinary team specify evidence of animal status at the relevant checkpoints, death confirmation and how an exception is held. The design must avoid an unintended shortcut into skin preparation.

05 / Pre-skinning and body preparation

Allocate preliminary skin work, head handling and flank/shoulder preparation to the selected dehider interface. Mark utensils, hygiene boundaries and the routes for heads and skins. Confirm any halal segregation requirements before assuming that shared tools or areas are acceptable.

06 / Mechanical dehiding

Compare the roller or hydraulic dehider with the approved animal mix, prepared carcass and hanging position. Give the hide a defined exit and keep removed material away from exposed product. Cleaning access and any certifier-required dedicated equipment belong in the equipment schedule.

07 / Rehanging and evisceration

Connect hind-leg rehanging to the clean-area work positions and the offal receiving route. Describe how the carcass and its associated edible/offal material stay identifiable. The layout must support both veterinary examination and the facility’s halal product-status controls.

08 / Veterinary inspection and trimming

Place inspection and trimming where the competent veterinary team can review carcass and related material. Define released, held and rejected movements. A halal status check cannot replace veterinary release, and veterinary release alone does not establish halal status.

09 / Washing and chilling transfer

Coordinate any final washing with drainage, the transfer rail and cold-room entry. Define refrigeration scope separately from the mechanical rail. Maintain the agreed halal separation and product-status identification into storage and onward handling.

10 / Records and dispatch boundary

Write the responsibility for operating records, cleaning, product identification and audit evidence. Confirm the approved halal scope for storage, further cutting and dispatch with the relevant certification body. Machinery supply alone does not approve the facility or its products.

Match the approved route to the equipment

Dehiding arrangements

Compare roller and hydraulic options with the proposed sheep/goat range and preparation.

Chilling transfer

Coordinate the final rail with the separately defined cold-room scope.

Before the equipment brief is signed

  • Name the local veterinary authority and the party responsible for site/operating approval.
  • Name the recognized halal certification body and identify any export-market recognition requirement.
  • Document the animal mix, the normal and any seasonal work pattern, and the product route.
  • Mark utilities, hygiene routes, maintenance access and the inspection/held-product positions on the drawing.
  • Record unresolved decisions and exclude unapproved assumptions from the purchasing schedule.

Confirm this route for the proposed country

The route above is a project sequence to review, not proof that every country accepts the same method or shared facility arrangement.

Malaysia

Prepare a dedicated halal operating scope with the competent authority, including personnel authorization, method review and production records.

The DVS operating-licence packet for ruminants includes halal slaughterer authorization. Ask State DVS whether the proposed non-halal sheep/goat operation is admissible at this site before selecting equipment. Personnel authorization and premises halal certification are different decisions. DVS private slaughterhouse build application and checklist (Department of Veterinary Services Malaysia; PDF page 3, checklist items 1–11).

Indonesia

Plan the halal location, equipment and supervision as a defined operating scope. Confirm the authority's species/method decision before procurement.

The statutory halal/non-halal separation covers locations, work areas and equipment. A shared line changed between shifts is not presumed compliant. Agree the actual small-ruminant facility, product classification and physical boundaries with the applicable veterinary and JPH reviewers. Government Regulation No. 42 of 2024 on Halal Product Assurance (Government of Indonesia / BPJPH; Articles 6–9, 196–198; PDF pages 4–6 and 73–74).

Kazakhstan

Select the applicable halal standard, assessment body and buyer-recognition route. Keep that scope separate from mandatory veterinary and EAEU compliance.

Uzbekistan

Develop the halal assessment scope under the voluntary Halol procedure and agree the slaughter method with the selected competent body.

Boundary for this route

  • The certification body/authority decides the accepted species, method and operating scope.
  • No blanket rule is stated that every reversible method is approved or that stunning must always be omitted.
  • Malaysia and Indonesia require particular dedicated/separated halal arrangements; confirm the applicable location and equipment boundaries.
  • Kazakhstan/Uzbekistan conformity schemes and buyer recognition do not replace statutory veterinary/environmental compliance.
